Does anyone know if you can use a pc keyboard and mouse on the xbox 360 to play shoot em ups as i am so much better with keyboard and mouse.
I have a Microsoft usb mouse and a Saitek usb gaming keyboard.

Yep. I used my kb/m for all my console shooters until I went back to pc gaming.
If you want quality over price, then the XIM is the way to go. http://xim360.com/community/index.php You'll find all the info and help you'll ever need.
There's some other type of adapters, but having tried most of them, there's no comparison to an XIM.
