What's the best suggested method to convert my MKV files so I can burn the episodes to DVD for viewing on DVD player. Thanks in advance.

DVD Flick (free) or ConvertXtoDVD (payware) will burn mkv. Here's an old guide for DVD Flick to look over: http://beginwithsoftware.com/videoguides/dvd-flick-guide.html ConvertXtoDVD is easy to use and has a simple menu but the trial will leave a watermark.

Many MKV Converters can be found if you take a search on Google.
