I purchased the full version of Nero but I downloaded the latest version(7.0.1.4b) of it through the Nero site. I installed it with my serial number but it still shows as Demo in the Add/Remove programs. How do I get it to show Nero 7 Ultra Edition? See pic below:

Also when I go to update my Nero, it tells me it can't find an internet connection but as you can see in the pic below that I'm clearly connected. What could be the problem?

The Demo version and the Ultra version are the same thing. If you have a paid for serial number, it is supposed to unlock any features hidden on the trial version.
I am not sure what is going on with the internet connection you posted. Here is what Nero says:
and this is for another type of error:
    and another one:

@alkohol and maxburn - Thanks for the responses! As long as it doesn't try to expire after 30 days then I'm ok. Maybe this will be something they'll include in the next update.

@creaky - sorry for the multipost. How do I 'bump' a thread?

A "bump" is when you have your post and no one replies for a day or so, and you just post to your own thread saying either "bump", or put something down like "i really need help with this". This causes your post to go to the top of the list as it has a new reply. Sort of like cutting in line, but you've been in line for a while. It takes some time for ppl to see your post and respond to it, so be reasonably patient. In this case your other post linked to this one so it sort of worked like a "bump". It is not something to be abused, but in this case, it worked for you, and didn't cause problems. The problem with multiple post on the same subject is ppl will respond to both threads, and might get lost trying to find the original message or poster.

Thanks for pointing that out Jeanc1. I somehow got from the post that creaky had told newtechie to bump. I guess if no one answers your original post, they are supposed to post again, later on?? I don't know, as i respond to most posts, and put up very few of my own. I thought stickys were for things like guides, and important topics..
