Booktyping is only possible with some writers. If yours is not capable of doing this, it just can't do it. If your writer is capable of booktyping it can be told to do so automatically with every disc you burn.

What's the make and model of your drive?
Like Jigen said if your drive can booktype you need to set this option in Nero on +r/rw & +r dl discs only. Otherwise the format stay the same.

((Here's how to Book Type using Nero Burning Rom))

    1) open up Nero StartSmart, then click on Nero Burning Rom
    2) EXIT out the "New Compilation" when it pops up
    3) click on "Chooses A Recorder"
(it's a small burner icon next to (I) and the arrow down)
    4) click on “Options," then on "Book Type Settings," set to "Automatic"
and click "OK" - that's it
Now every time when you burn using a DVD+R, DVD+RW or DVD+R DL disc, Nero will “automatically”
change the Book Type into a DVD-ROM format.
