This worked for me, but I confess to being a total clueless newbie, so I don't know if it will help your situation:
In Nero Vision, click the "More" button at the bottom of the screen.
    Click "Video Options".
In the "DVD-Video" tab, choose Encoding Mode: "High Quality (2-Pass VBR)"

    Good luck!

I have no way of knowing if it was the *same* jerkiness, but I had a jerk about every 1.5 seconds. The jerk was not in the source video, but was in the transcoded stream (I burned to hard drive and observed the jerk there). The jerk happened with AVI as well as MOV and MPG source files. When I moved to the higher-quality encode, the problem was no longer observed.

Now I have the (probably unrelated) infamous problem that I'm using 7.2.0.3 and every attempt to transcode anything of any size dies with "nmc_processing_exception" and "buffer overflow". I'm reverting back to 7.0.8.2 using the previous instructions. I really hope that fixes it because I'm working on a project that positively has to be done today (gulp!)
Anyway, that's unrelated and I'll post more about it in a sec in a more relevant thread

Also possibly relevant is that I had been using the latest-reatest Nero Vision Express 6 with no trouble on the same source files. I ovserbed the problem only after paying the money to "upgrade" to Nero 7. Grrrr...

I never had any problem with AVIs specifically.
My "choppy Nero 7" happened with all source media.
