While looking at cnet's guide to different video cables, I noticed that they had the component cables split into 3 different catagories: interlaced, Progressive & HD. Would I be wrong in assuming that this is only refering to the source of the media being sent through the cable?

No you are correct. The Component Video technology can handle everything from 480i to 1080p!
