Do you mean two physical monitors from one graphics card ?, as it's fairly straightforward to do from what i've read on the net, though never got around to it myself because i started using Enlightenment instead, which lets you have loads of virtual screens/desktops on the one monitor. For instance on one of my work linux machines (Mandriva 2007.1 for now) has Enlightenment running with 8 desktops - i have mine working from left to right/right to left; you move the mouse to left or right edge of screen and keep going, the mouse moves to the next desktop. it makes working on stuff a hell of a lot easier.

I would like to have my TV and monitor dual displaying from my single graphics card. I have only tried in XP so far but might try in Ubuntu as well.

I know it's possible in theory because when XP boots the BIOS info
and XP splash appear on both screens but thereafter it is only one that displays...

If your card is supported Linux will see the tv out as another monitor you only have to enable it
