Use the CCC to do the overclocking... It's pretty simple but it involves adding more fan rpms and way more heat. Always overclock in very small increments.

You can also use RivaTuner. It seems you are a bit of a noob at this, so I would suggest you read up on things like 2d clocks and 3d clocks, getting a stable overclock etc as you can damage you card with this.

Keep in mind that overclocking never adds that much performance to the card, and it some cases can even hurt the performance.

Or, you could get a big boost out of it like I did.
My 3dmark06 went from 5600 to 6700 by overclocking my graphics card (an X1900XT).
The program I use and rave is ATiTool. It's very simple but effectively.
Run the two overclocking tools one at a time. Run the core test until you get a crash, then when you reboot, set it one notch lower (the overclock is disabled on restart so it won't crash again). Do the same for memory, but usually it won't crash, you'll just get picture corruption instead. Set it the highest you can go to get a clean image.

sam, I would recommend ATitool too, but it doesnt support the 3*00 series yet... Neither does traytools.

Yeah, I hope they come out with a working version soon though. I love tray tools and atitool - way better than RivaTuner and the standard CCC IMO.
