Need help with ... BluRay to Avi (or mkv)

Hi All, ... great forum.
For the past few weeks,I've been backing up my SD DVD movies to my PCH using DVD Fab PLatinum, which outputs just the plain movie to "AVI" format which is great, ... but now I need to do the same for my BluRay.
I bought the Lite-on LH-2B1S (triple burner) and got AnyDVDHD to rip in a movie ... the first one went in at 37GB !!!! So now, my question is, how do I go from here to get a 1080 avi file?
please go easy on me, as I'm not a hardcore A/V enthusiast! :)
I'll keep reading to see if I can learn more, but thanks , in advance for any tips/help with pushing me in the right direction.
