Download 'DGMPDec' to demux the DVD files with DGIndex.
Download 'DVDAuthorGUI' to add the subtitles to the demuxed files and reauthor the DVD.

Run 'DGIndex', click 'File' 'Open' and load the VOB files for the title.
    (VTS_01_1.VOB, VTS_01_2.VOB, etc)

Click 'File' 'Save project and demux video' - this produces an .m2v and an .ac3 file.
    Exit when complete.

Run 'DVDAuthorGUI' and click 'Add Title' - this will load the demuxed video and Audio.
Click 'Extras' and add the .srt file.
Click 'Author DVD' and choose a destination folder for the files.

The media player has the option to turn the on subtitles.
WMP it's 'Play' 'Captions and Subtitles'.
    VLC it's 'Video' 'Subtitles Track'.

Is VLC offering the subtitles track from the drop-down menu?
If it's offering the subtitles, then it thinks they exist.
If it doesn't offer them, then something went wrong in DVDAGUI.
The log file should indicate that it processed the subs - like this extract from mine.

DVD Shrink says that you have subtitles.
Did you burn a disk and test them?

See if this link helps (it mentions how to tag the subtitle with the appropriate language label).
Note that I have only used Western European (English and Spanish) and Eastern European(Polish) subs - I don't know which settings are required for Greek, Cyrillic etc.
