I have a 6.75 GB DVD and if I use DVD shrinks it shrinks it to 4.7 GB.What parts of the movie are removed?

By default, the movie will be encoded with all the features - unless you explicitly un-check certain subtitles and audio streams.
If you elect 'Re-author', you can dispense with the menu and trailers, etc and retain the main title plus the audio, subs, etc..

I think what u mean is that the bit rate of the film is reduced.
