I have 3 films that I would like to put onto 1 DVD-R (minus extras and original menus)to be played back in a normal DVD player.

I Have DVD Shrink and Nero - how do I do this?

Also, what software can I use to make a simple 'select film' menu?

Use DVD Shrink to open the 1st movie, re-author to edit out what you don't want, then backup to HD. Repeat process with second movie. When you finished editing the 3rd, Open 1st backup and re-author to add to 3rd, Open 2nd and re-author to add to 3rd and 1st. Then backup and burn. I would check compression, anything below 70% the quality may not be to your liking.
