I have seen that DVD projects can be burned in Nero using either DVD-Video mode or UDF/ISO mode. Does UDF/ISO mode offer better compatibility with players, and are there any drawbacks to using it? Also, is there any reason not to select the XBOX compatibility mode, just for the heck of it?

Not sure this will help but I've always used DVD-Video mode with default settings. Never had any problems.

Don't know what the XBOX mode does.

Ok, I've noticed that the DVD-Video setting actually uses udf/iso mode (this is in Nero 6.6) so I'm not sure if there is any actual difference. I've also heard that DVDs will play on xbox without the special mode. I'm thinking the xbox mode may be for writing data, not video.
