All the guides here have screenshots taken directly from the pc. What is that program called that captures them?

The PrintScreen button on your keyboard.
    Hit it.
    Open MSPaint.
    Click Edit, Paste.
    File, save as .jpg

If you wanna resize it, just resize it in Paint before saving.
Get IrfanView (free) instead of Paint. It's much more powerful.

Why is it that when i save the image to my pc, and then send it to myself via email, everything looks distorted, (it opens up in a web page). but if i open it up in photoshop, it looks fine?

Because your browser isn't really designed to view images (that size).
If you right click, and save the image, then open it in photoshop again, it should look just fine.

Alt-Print Screen for the open window only

Ctrl-Print Screen for the whole screen

Use MS Paint, on new blank page click edit then click paste.
