Is there a way to change it back, or undo the upgrade?

not so far as i can see.about the only thing you can do is click on your start icon and click on the top left icon to expand or minimize the apps.kind of pointless tho as it comes back the next time you click the start button.like i said,i dont even notice it anymore.

I can do better than revert back to win 10 how about back to the future with classicshell.
You have option of xp,win 7 or keep that shite win 10 start menu.
It has other settings you can adjust including menu speed & cascading menu's etc, etc.Once you've got it how you like it use it's backup function as well,it'll save having to do it all over again if anything goes wrong with windows

edit:updates in windows don't affect classicshell as far as i can tell. I've been using it for a while starting with installing it into win 7
