I have an airport express, but I'd like to be able to watch DVDs and hear the audio through my sourround sound stereo set up. I was wondering what kind of computer-to-stereo set-up yields the highest quality. thanks for your time.

Check out Xitel's pro hi fi link. It'll connect your lappy to your receiver/preamp in one of three ways (standard rca, optical (toslink) and spdif. Comes with 30 feet of each cable and is less than $100.
I have two and swear by them for quality audio.
