Ok in a nutshell, I already have a sky dish installed pointing at Astra 28.2, but I would like to get Polish channels on Hotbird 13E. Would I need to get another sat dish installed to pick this up or just another lnb put onto my sky dish pointing at 13E?

a standard sky dish at 60cm may be to small for dual feeds or more , also as its a smaller size dish the feed arm will be shorter . so id say best to have an 80cm dish and of course you need a multi lnb bracket to hold the second lnb . if your current dish is an 80cm dish you only need a multi lnb bracket .
