   I have an AVI file that is 10Gb and I would like to burn it so it spans multiple DVDs. I am using Roxio Easy Media Creator 7 and I don't see a way to do this.

   How about splitting the avi into however many dvds you want to use up and then converting each one individually.
   Heres a guide on how to split an avi file
