It might be a stupid question but is this possible with my Swap Magic 3.6 discs?

Yes you can set the video mode in Swap Magic to PAL. Some games might still be in black and white. For those you can patch them to NTSC.

    37. Q. I downloaded a PAL game, how do I convert it to NTSC?
    A. Use Adrenaline patcher if it's an EA game: http://www.megagames.com/ps2/ps2_utils_files.shtml#ADRenalin Patcher Note: I've been told this works for non EA games as well. The screen won't be perfectly centered, unless you have a modchip that forces video mode.
Or patch with PAL2NTSC patcher with Y fix for non EA games: http://forums.afterdawn.com/thread_view.cfm/121718

If I have a matrix infinity, can I stop the game showing up as B&W by changing the video mode? I have a quite old TV.

Yes. Hit triangle+circle at bootup. Set the Video mode to NTSC and set the Y fix to auto. Hit start to save your settings and hit reset to boot your game.

Yeah you set the video mode to whatever video mode your PS2 and TV is. It forces the game into whatever format your TV and PS2 support.
