I am creating a DVD for sales people to use when they go on the road, with helpful information that we have recorded, I have the chapters set up where i want, but is there a way for the video to play that once a chapter has been selected - instead of going to the next chapter it will return to the chapter select screen - kind of like the movie companies do with deleted scenes - to where you can view them individually or all of them together
AFAIK you can't with chapters. If you had a number of 'Titles' then pressing the 'More' button on the menu layout page gives the option of jumping back to the menu when the current title ends. If the source was an AVI file, then it's quite simple to save individual sections of the video with VirtualDub. Each would be a separate title when loaded into Nero Vision.
