I am going on vacation and want to back-up a few DVD's so they won't get messed up on the plane, will they work in my regular DVD player?

Basically yah they do, however some dvd players are picky on which type they like. (+ or -) Might be a good idea to try it out real quick before you leave to see which discs to use.

I want to use the burned DVD's on my portable DVD player, will it work on that? Also, I just put in my Shaun Of The Dead movie and it is 7.37 gigs or something!? How can I copy that? What type of discs do I need? All I have now are DVD-R's.

You will need 2 free proggys to break css encryption an compress the vidio folder to fit on a dvd5. Just click on these blue lettered proggys to get to download page. Dvd decrypter and dvd shrink. Here are some good guides. http://home.comcast.net/~bbmayo/index.html
