to extract isos to an external hd i use s360x_V4.1 (Schtrom 360 xtract) it also rips games among other things.

to extract games with s360x, under tools choose xdvdfs xtr.
then either check DVD-ROM type to extract from a disc or check Image name to extract from an iso.
after you select the extraction path hit load image.
then, on the left, highlight all the files Except the $systemupdate folder and hit extract.

other programs that extract games are wx360 and exiso. exiso is command line only but there are a bunch of gui's for it and are your only options for batch extracting. the reason i dont use exiso is that my antivirus calls it a trojan, but that is a false positive.

to play the games from your external you need to load them from a homebrew dasbboard like frestyle dash or xexmenu. alternatively you can use quickboot to create shortcuts to your games which allow you to launch them straight from nxe or quicklaunch.

to play games from your 360 hdd you need to convert the isos with iso2god, or convert nxe installed games with nxe2god. games installed to your 360 hd can be launched straight from nxe or quicklaunch.

to unlock and organize arcade games and dlc use xm360

Welcome to the BIG world of having a JTAG :) It's not all that complicated. Just take your time and you'll be just fine.

start with xexmenu, wabash linked you to a bunch of great tuts that will teach you everything you need to know about your JTAG. Start with this one HERE

the first thing you have to do is get xexmenu, if you dont have it already.

xexmenu generally runs from the 360 hd so to get it on there you either need a transfer cable and a program like xplorer360, or you can burn it to a cd, which is why i suggest you get it first.

xexmenu will allow you to copy/paste files to your 360 hd so you dont have to use a transfer cable anymore.

edit: lol i guess i was late with that
