Quad core, every time. As to whether you need an i7 or i5, depends - for gaming you want the i5, for video editing/encoding, you ideally want the i7.

but would it be better with hyperthreading? im thinking of getting an i5 right now then upgrade to an i7 later. what would you suggest. its mainly for games. im barely looking into the whole rendering stuff. like autodesk 3ds and alias automotive.

You can't get an i5 quad core with hyperthreading, no such thing exists yet. However, you can basically get the same thing in the i7 860, it uses the same platform as the i5s, is a quad core with hyperthreading. If you are a gamer though, you do not need hyperthreading, at all. So go with the i5 750.
