stuck on how to convert MKV movie file to DVD

    i've researched on the forums, but i'm not sure how to begin converting this movie file (.mkv, video codec Nero H.264 avc, audio HE-AAC, plus subtitles) into a standard watchable DVD.

    i can usually figure out specific later steps, but what software do i use just to start the process? i gather that i need to separate the video, audio, and subs, convert them individually, and then use DVDlab or whatever to combine them all with a menu. is this the general idea?

    sorry to sound like a bum, but thanks for any general help!

    EDIT: also, this movie file (End of Evangelion) plays on pc using media player classic and codecs, but certain scenes with quickly repeating/changing images seem to drag and sputter. the audio plays fine (it's during a song, so easy to judge) but the video fails to keep pace and then "catches up" quickly after the sequence ends.

    does anyone have an idea as to whether this phenomenon is due to my pc software (meaning the DVD should play great), or is it likely the source video itself? my store-bought, lower-vid-quality copy of the movie does not have this problem. thanks!

    the threads i've found on here deal with the audio portion of the process. what about the video itself? i have the VSO 'divx to dvd' software -- do i just convert it with that?
