Use Virtualdub in capture avi mode, select composite or 'camera' (s-video) on video source. Use huffyuv or mjpeg codec for compression. Then convert avi to mpeg.

I used a tv card(hardware that I installed in my computer) and I installed all the software and all I did was hook up my vcr up to my computer and it automatically encoded the video as it played to mpeg on my computer so it took up less time that the easiest way to do it. I used tv wonder, tv cards arent that expensive either, just thought that you would like to know that.
