Whats the fastest windows 7 ?

Hello,

Is there any discernable difference between the varying versions of Windows 7 and performance or are the only real differences what's left in or taken out of them?

Want to make sure I install the fastest possible version for intensive applications to get the best out of it. Would there ever be an advantage to installing Professional over Ultimate performance wise?
