I have just successfully softmodded my xbox with the stock hd. I was thinking about upgrading to a bigger one but I'm not sure if the one I'm looking at would be compatable. http://xboxdrives.x-pec.com/?p=list is a compatibility list of lockable xbox hard drives... Also ive used Seagate 160GB quite often in some of my installs and it has worked flawlessly... ive used the 7200.8 version but I do not see why this would not work either. You should be fine As for the DVD ROM, I am not 100% sure on that.
