I just burned my first DVD with Toast, "The Recruit." When I pop it into my DVD player I get a menu showing the files on the disc not the film's menu.
I used the Trifecta-that is DVDBackup, DVD2One X, and Toast to burn it. I ripped the VIDEO_TS file into a folder called "The Recruit" and then used DVD2One X. I burned the resulting VIDEO_TS folder with Toast.

So, this being the first DVD I've made did I do something wrong? Should a burned DVD load like a commercial DVD or will I always have to pick the right VIDEO file to play the movie?

How did you burn it on Toast?

As a DVD-ROM. It's strange; the file for the film's menu is on the disc, I can open it, but it doesn't do anything. I noticed right before it starts to burn Toast places two 2KB files on the disk-DF and DS or something like that. What are those and can I get rid of em?

Also I can't play it on my mac's dvd player. I have a 17 inch powerbook with 10.3.3.

You have to get rid of those two little files (.DS_Store is a window settings file). To get better compatibility with most DVD players add an empty folder named AUDIO_TS. The burned DVD should load like a commercial one.
If you want to play the movie in your Mac you need to use DVD-R media.

SO how do I get rid of those two files because they seem to pop up right before the disc begins to burn so is there a setting I can turn off?

Even though I didn't make the AUDIO_TS folder there was still sound with the movie.

    Also I'm using TDK 4.7 GB DVD-R 2X media

Finally, is there any way to keep the aspect ratio because the original disc is widescreen but the copy was playing in full screen.

Those two little files should come up when you drag the
VIDEO_TS folder onto Toast not just before start burning. To
get rid of them just select them and press the remove button.
Anyway what I do is: create a folder in the desktop and name
it as I want the DVD to be named (for example Movie). Select
this folder for the DVD2oneX output. Open Toast, select the
data tab and choose DVD-ROM (UDF) and drag the folder
(Movie in this case) containing two folders (AUDIO_TS and
VIDEO_TS) onto the Toast window. Doing so I never get the
    .DS and .DF files.

You don't need the AUDIO_TS folder to get sound (it is always
empty) but there are DVD players that will look for it, so you
get better compatibility if the folder is there.

TDK media should be good enough but I use Ritek Branded
DVD-R and never had a problem and you can get them for
    about £0.55 in the UK.

Regarding the aspect ratio there are some DVD's that will
have both ratios in it. I guess you chose to compress just the
movie in DVD2oneX and by mistake selected the full screen
one. Once you select the source and choose to copy just the
movie in DVD2one all the available titles will pop up and in
this case there should be two that are the same length being
one the full screen and the other one the wide screen version.
To make sure which one you have done before burning the
movie just open Apple DVDPlayer and in the menu bar click
on File and select Open Video_TS folder and navigate to the
folder DVD2one produced, choose it and press play.
