Colors are great in Nemo....Incredibles and Robots are much the same. Not only do the kids like them, but they are pretty good for the parents also.

in my home theater... i always look for dvd's encoded in dts as i am all about the sound....
but when it comes to color and clarity.. my 57" hitachi w/s and dvd player with upconversion..

shrek 1 & 2, nemo, monsters inc.. (heck, all the disney and pixar films) have outstanding colors and imagery....

stealth is good for surround effects, saw, ice age's initial scene with the squirrle (spell).... where he has the acorn... thats good sounds there..

there are too many to name

Before my divorce i had a 43' LCD w/s hooked with a costum built 5.1 Mission series 7 sound system on a superb Marantz amp.
Now i have my pc with a 17' TFT monitor, hooked up on a £15 pair of speakers...

Every film i own was superb in it, but there was a few that use to overwelm me:
    1. HEAT
    2. PLATOON
    3. SAVING PRIVATE RYAN
    ...

You are very right, Scarface IS very good, especially when the sound is right... As for Texas Chainsaw, i was never allowed to watch that film... (ex and my kids were always around...)
I think i only watched it once actually, whilst on hols in Spain... And that was dubbed in spanish as well... LOL

the new version is a must buy and in dts
but heat is a very good one, altough i am looking for the special editon, re-mastered in dts. the fight scene in there is the longest gun fight on film... when the bullet casings hit the ground... the detail it has... simply awesome..

Those are the my SOUND RELATED favorite DVD's...

Heat's bank job is brilliant because they didn't use any kind of filters... What you hear is what it is... Every little noise is there! Simply Superb.

Platoon was Platoon... No need to say anything! Just brilliant

Saving Private Ryan was also awesome, again they didn't use any heavy filters, so the sound was almost real...

The best DVD ever has got to be
    1. The Shawshank Redemption...
    2. Crash (the new one)
    And... I love this film:
    3. The usual suspects.

There's more but i have about 300 different titles...

I also got about 250 backups between Svcds and DVDs.

But in terms of sound i can only consider the original ones or my very best copies...

Well, now i can't really check if my recent copies are any good.
But i have some old sound copies like X-Men, Independence Day and Blade I, that use to make the whole house shake! The sound quality was as good as... I had this mirror that use to nearly fall off the wall everytime i had a cinema session...

But now i can only make my cup of tea shake when i put the sound up... LOL LOL

And yeah, you're right altough DTS isn't as bassy (and i love bass!)the quality is very superior!

    @Permiggs

Black Hawk Down won Best Sound at the Oscars. Heat wasn't even nominated. I know Heat's sound was good. It's not the only movie worth mentioning, though!
