Me and my wife accessed an adult website last week. Now, today there is a cookie saying I accessed this sit last night at 10:59 PM when i didn't! My wife sees this and asks me why I looked at this site last night when I didn't!! Can a cookie go back and forth between the server and your computer even if you didn't look at the website on that date?

Most cookies are placed on the machine at the time the site is first accessed. However, some cookies can automatically update themselves when you connect to the internet.

You can change those settings by going to the Control Panel, click on Internet Options. On the General tab (IE6) click on the Settings button under the Cookies section, and choose from the four selections. Usually the third one is checked which updates cookies even if you didn't visit the site.
