Firstly we need to discover what you mean by DVD-Audio here.
There are a couple of different flavours.
1/. Genuine, real high resolution DVD-Audio.
This is up to 24/192 stereo PCM, and 24/96 Surround. It requires highly specialized authoring equipment & software, and will never be in Nero.
Also, you need a DVD player that can actually play back DVD-Audio as opposed to Audio on DVD-Video.

    2/. DVD-Video, Audio DVD's
These are a different animal, and again you need special authoring software, but it is a lot cheaper in the main.
It also allows you to use compressed Audio such as Dolby Digital, and if you do it right you can fit up to 60 albums onto a single disc.

3/. Data DVD with MP3 files on them.
Not much good, really. DVD-V would be a better option for this.

Can you post back the make & model of the DVD player being used, wether or not it is set up for surround or stereo, and wether or not the restaurant is covered by PPL (in the UK) as you need licenses to play music in public places.

Once I know the make & model, I'll go look it up and get back to you with some options....
