I just started trying various converting methods the past couple of months, and the fastest I've come across by far is WinAVI.

I usually join my files first with Easy Video Joiner, which takes only about a minute. With my pretty standard RAM amount (around 500 whatzits), WinAVI takes about half the time of the actual tvshow/movie to convert to dvd. These files are then very easy to burn using DVDshrink's 'burn from hard drive' feature.

I found TMPGenc/Cucusoft/Dvd Santa, etc all very complicated and slow; I don't know what more experienced users recommend, but I love WinAVI!
