Help with authoring?

    I have a 6-disc TV series that I wish to back up to DVD+R with no quality loss. In order to do that, I need to cut down the number of episodes per disc. And in order to keep it from looking sloppy (like having menu buttons that reference nonexistant video), I also want to build my own menus from scratch with scene, language, and subtitle selection. I've dabbled in a handful of different programs, but so far no dice. I've gotten closest with DVD-Lab, but the subtitle track always seems to get dropped from the original VOBs and there seems to be no way to incorporate language/subtitle select into the menus, unless I'm overlooking something.

    Can anybody give me the name of the software I'd need to accomplish this stuff, or perhaps point me in the direction of a guide or FAQ that would help?
