Alright, well the video's where you get them doesn't matter much. What converter are you trying to use? There is a guide on how to convert videos with a bunch of different converters here:

If you want something for free try Videora - its listed on the middle or so of that page.

Now to add album art you ...
Right click any song in iTunes, click “Get Info” , then click the Artwork tab. If you click “Add” , then you can browse through your computer and locate the image you wish to apply as album art for that song.

To change Album art in batches (i.e, if you want to apply the album art for all songs of a certain album), then you type that into the search bar. Then, once you have separated the songs you want to apply the album art to from the rest of your music collection, click on any one of the songs and then go Edit=>Select All. Then right-click on your highlighted songs and click “Get Info”. Then it’s as simple as dragging your desired artwork into the Artwork box, and clicking OK.

To make sure the Artwork displays on your iPod, go Edit=>Preferences=>iPod(tab), Music (tab), and make sure that the box that says “Display Album Artwork On Your iPod” is checked.

You might consider reading some of the things here as well:

    Good luck!

Just one video? Or is it a reoccurring problem? And does the video play with or without sound in iTunes?

Then you probably have a 60 gig iPod with firmware 1.1? To check your firmware go to settings and then 'about' in your iPod. If it says something other then 1.0 I would suggest downgrading to 1.0. All the previous iPod updaters can be found here:

    http://www.ipodwizard.net/showthread.php?t=7369

If that isn't the case, make sure you're converting videos to fit these standards:

    Video formats supported:
H.264 video up to 768 Kbps, 320 x 240, 30 frames per sec., Baseline Profile up to Level 1.3 with [bold]AAC-LC up to 160 Kbps, 48 KHz, stereo audio in .m4v, .mp4 and .mov file formats;[/bold]

MPEG-4 video up to 2.5 Mbps, 480 x 480, 30 frames per sec., Simple Profile with [bold]AAC-LC up to 160 Kbps, 48 KHz, stereo audio in .m4v, .mp4 and .mov file formats[/bold]

In bold are the audio requirements.

1.1.1 wasn't normally reported to having caused problems with the Audio and Video, but I'm still using 1.0 myself, as it has no bugs that I can find, and allows you to turn the backlight on and off by holding down Menu.
