If I have a burner (+r) with 8x speed can I burn media that is designed for a speed over or below that speed? Since I have Sonic recordNow v.7 I cant control the burn speed. Does it mean that the program automaticly sets the burn speed according to the media or that it keeps the default speed of 8x?

I can say that I have tried burning with ritek 4x media and it went bad, so I don't know what to expect.

You can use any media speed but since your burner is 8x you won't be able to burn at greater speed. The 8x means that's the MAXIMUM speed your burner can burn, but if you use 4x disc you only can burn up to 4x that's the speed most people here would recomend. Personally I have no problems or errors burning at 8x and they play just fine.
